Caballito Cerrero Ensamble Azul y Chato Blanco is born in the heart of Jalisco at the Santa Rita Distillery, where 14th and 15th generation tequileros carry on a legacy that reaches back to the 1600s. This spirit refuses the constraints of NOM and proudly claims its place as a Destilado de Agave. Using a mix of blue agave and rare agave chato, a cousin of espadín once common in tequila before regulations narrowed the field, it delivers a taste that feels both historic and rebellious.
On the palate, expect bold waves of roasted agave, earthy minerality, herbal depth, and a whisper of citrus that lingers with every sip. Bottled at a powerful 52.8% ABV, it speaks with intensity yet retains remarkable balance, showing off the craftsmanship of one of Jalisco’s most respected families. Nothing about this is mass-produced—each bottle is a statement of tradition, innovation, and authenticity.
Best enjoyed neat to appreciate its full complexity, though it also shines with a splash of water or in carefully crafted agave-forward cocktails. For those who crave spirits with a soul, Caballito Cerrero stands as a reminder that great things live outside the boundaries of convention.
